docs: adds ex for creating client w optional projectId

This comes as part of an effort to consolidate the firestore_setup_client_create and firestore_setup_client_create_with_project_id regions.

Note that for most other languages, this is a snippet consolidation effort; whereas for NodeJS, neither snippet had existed.
