[Feature] switch to using node-caged

I have searched the existing feature requests, both open and closed, to make sure this is not a duplicate request.

The feature

https://github.com/platformatic/node-caged is a base image of Node which uses pointer compression to bring memory down on the server base image maintained by the team who makes Node.js

I've noticed high utilization of RAM while running immich and wonder whether switching out the base docker image would help in this case.

I doubt it would make much difference. That's also not a build to be used in production, but clearly described as a bunch of experiments.
