The table in the readme reflects last year's projects. We should update that once we close #8

Maybe it would be better to remove that entirely or we will need to modify it every year. When sending it to GSoC application we need only the file inside the 2022 folder. What do you think?

Agreed. The overarching content is great, but the table should be replaced with a link to the current year's table of projects.
