Removing winehq-staging from packages.yml because wine sort of covers this already, and this was mostly aimed at playing a specific game at one point.

ended up needing to fix logging to file, because scroll back for trouble shooting installed packages vs packages to be installed was so long, my terminal didn't save it, so I discovered that logging to a file was broken, the hard way, and fixed it.
