Fix signing key encoding

This release fixes the signature verification that was broken in v1.2.4.

Bug Fix

Reverted to UTF-8 key encoding: v1.2.4 incorrectly changed to hex decoding for the signing key, but Inngest SDKs (JS, Go, Python) all use the key as a UTF-8 string. This caused HMAC signature mismatches with errors like:

Signature verification failed: HMAC mismatch
computed=30af157c..., expected=6bc60ed5...
```

Now both request verification and response signing use UTF-8 encoding, matching the behavior of other official Inngest SDKs.
