* fix: update Vitest matcher type augmentation

Vitest 5 assertion typings use Matchers<R, T> and carry the assertion return type separately from the received value. The old Assertion<T> augmentation therefore stopped exposing toMatchEntity in the Vitest workspace. Augment Matchers and return R to restore typed matcher calls while keeping expected values tied to the received type.
