Create binder environment

It would be great to be able to run these demos in My Binder. That would allow everyone to easily run the notebooks. Here are the steps we would need to take

• make the repo public - does anyone have a problem with this?
• add an envrionment.yaml file which specifies the dependencies required for the notebooks

Hi @rabernat, it looks like the repository is still private and thus cannot be tested on Binder. Are we not making it public until all notebooks have been reviewed?
