Add table as a panel

Is there a way to add a custom panel, in my case a table of params?

Or a way to add an mpf figure to a plt grid? That way, I could put the table directly under the plt figure, combined into a single figure.

Not directly, but there is probably a way to do these things with access to the mplfinance Figure and Axes objects.
If I had more time I would play around with it and give you a specific suggestion. In the mean time I suggest you read Acessing mplfinance Figure and Axes objects and follow the links there, to see if that gives you any ideas.

As you can see in the panels tutorial it is possible to create an empty panel. I'm thinking possibly then using returnfig=True to gain access to the Axes object corresponding to that panel may allow you to place a table in there.

Please let me know how it works out, or if you run into any difficulties. I hope to have more time towards the end of this month.

fig, axlist = mpf.plot(
        df,
        ...
        returnfig = True,
        num_panels = 2,
    )

table = axlist[2].table(
        ...
    )
