We no longer officially support so we should remove it from docs.

Pull Request Overview
This PR removes Smithery support from the MongoDB MCP Server project, as indicated in the title. Smithery is no longer officially supported, so all related documentation and configuration files are being cleaned up.
- Removes the Smithery badge and link from the README
- Deletes the entire Smithery configuration directory and its contents
