In this PR I added server version to the PPAs we publish to. The first two commits align the publishing as per the current platform support (with an exception of MONGOSH-924).
The third commit keeps the current publishing behaviour and only aligns platform support for 8.0. If that's not ok, let me know and I'll revert that commit.
