CLOUDP-342259: Fix e2e test clean up

• We were trying to clean up more than needed (see this evg patch), including our cloud-dev project that contains clusters that shouldn't be deleted. I added them as env variables to the cleanup step.
• Missing config in cleanup authentication
• Updating telemetry in some profiles
