TreeView / TableView: a column descriptor can now carry sortable: false to take that column out of the header-click
sort. Clicking its header does nothing (in cell-selection mode it
selects the column instead), and the header drops the pointer cursor
that advertises a sort. This guards against an accidental sort on a
column whose values are all equal: it leaves nothing on screen to show
it happened, and the next edit in that column re-sorts the rows and
makes the edited row jump.
The per-column flag only narrows: sortable: true on a table built
with sortable=False still does not sort. It gates the user's
gesture only, so sort_by_column() still works on an opted-out
column. Columns without the flag behave as before.
