Update gateway-api compatibility docs
…GF (#862) Extend the data plane configuration document detailing how to submit custom patches to unblock users who need to set fields that are not yet exposed in the NginxProxy CRD.
Update CLI help file with new flags. Verified table looked good with make watch.
Updates the NGF scaling doc for new capabilities being added in 2.1. HorizontalPodAutoscaling and updating worker connections. Also added the updated API reference guide for these changes. Finally, added some missing conditions in the compatibility doc.

feat: update examples in NginxProxy patches
The upgrade process for 2.1 isn't as straight forward as normal upgrades, due to the potential for downtime. The upgrade doc needs to be updated with this callout and the steps to take to avoid this scenario.
