Support self exclusion from the pipe

I have a program that re-composites the entire screen, but unfortunately won't work with niri due to a missing the ability to do self exclusion like kwin does. Niri uses the same pipewire system as kwin but, no has option to self exclude the new recomposited window so it won't work.

The app needs to capture the screen, without the app's own surface in it. As the app recomposites the screen (colour grading, distortion, blur, text/image compositing) and displays it to user.

This is the feature in kwin that allows it to do what it needs to do.

Ah, guess this falls into the discussion about making block-out-from able to omit windows instead of drawing black rectangles then.

It does have an excellent use-case when you take into account screen capture programs like OBS and Discord, allowing those programs to exclude themselves (or optionally be manually targeted for exclusion via configs) while screensharing or recording to make the 'infinity mirror' effect a non-issue.
