Fixed

• track_user and kernel environment detection never worked: PerformanceMetricsSubscriber used
  #[Autowire(service: '?security.helper')] / '?kernel' / '?stopwatch', which are not optional references (the
  attribute keeps ? in the service id) and, the arguments being nullable, compiled to null. Access records never
  stored the logged-in user and the environments filter fell back to APP_ENV instead of the kernel environment.
  The security helper is now wired in services.yaml (@?security.helper, still optional without SecurityBundle) and
  the kernel is autowired by type. The stopwatch stays unwired on purpose (the query-time fallback resets it, so it must
  not be the profiler's debug stopwatch); behaviour unchanged. Kernel test: PerformanceMetricsSubscriberWiringTest.
