Add Live Examples

Setup an examples directory that we can proxy through stackblitz.

- [ ] Cookie consent using Nuxt UI & `useScriptTriggerConsent()`
  - [ ]  Granular consent permissions

Will add more ideas as I come accross use cases. Feel free to suggest anything
