chore: bump node to 18 and pnpm >= 8 <9 in engines

This PR bumps node to => 18 and also only accepts pnpm to be >= 8 < 9. Need to figure this out, but somehow the lockfile gets corrupted if you use pnpm@9. For some reason it doesn't install anything in example/.
