Migrate disparate data pt collections to a single data collection

Migrate away from disparate collections (example: Temperature, Humidity, Lux, etc.) to a single collection that stores all data points. This will allow doing projections that compute math across all data points rather than pushing it in memory to the application layer.

Additionally this carves out the path for the FreeTier which will eventually have ttl data expiration once the premium individualized collections code paths are available.
