Configurable Lode dataset ID and proxy recency window contract

Summary

Adds --storage-dataset to override the Lode dataset ID (previously hardcoded to "quarry"), and documents the upcoming recency window feature for proxy random selection.

• 🔧 lode.DefaultDataset constant — single source of truth for the default dataset name, used at all flag definition sites

Upgrade Notes

• No breaking changes — drop-in replacement for v0.3.4
• The --storage-dataset flag defaults to "quarry", preserving existing behavior
• Users with S3 prefixes like my-bucket/quarry can now use --storage-dataset my-project to avoid redundant nesting
