test: wait for the boot probe before counting reprobes

The refresh-on-POST case asserted that the fake endpoint had seen at least two model listings by the time the POST answered, but the mount-time reprobe is fire-and-forget: whichever of the two probes the server recorded first decided the count, and a loaded machine (or a CI runner) could see only one. It now waits for the mount probe, takes that as the baseline, and asserts the POST added a probe of its own.
