fix(ci): Release upload 0-byte file crash

Root cause: vc_redist.x64.exe (0-byte dummy on Linux/macOS) and
elevate.exe (NSIS internal) matched by **/*.exe glob, causing
GitHub API 'size must be >= 1' error.

Fixes:
- Remove vc_redist from extraResources (not needed in app bundle,
  modern Windows 10+ includes VC++ Redist)
- Remove dummy vc_redist touch step for Linux/macOS
- Narrow .exe glob: **/*.exe → Image Trace-*.exe (excludes elevate.exe)
- Narrow backend glob: backend_bin_*/* → image-trace-backend-*
- Simplified installer.nsh

v0.1.10 proved all 6 builds work (3 platforms × 2 flavors).
This release should complete the Release step successfully.
