It looks like in TS 4.7 (and 4.8) these jest.fns were being inferred as returning `any` and now they are inferred as returning `unknown`, for some reason unclear from the TS4.9 release notes. They need to return `GraphQLFormattedError`; `any` meant TS ignored the problem, and `unknown` means it doesn't. So add enough declarations to get inference correct (declaring the parameter type is good enough since these functions return that parameter).
