Docs: update Event Handler docs with new APIs and types #4541

What were you searching in the docs?
In #4530 and #4536 we made changes to the signatures and types of middleware functions and error handlers in the Event Handler HTTP module to streamline the experience. We also added route prefixes in #4523 to allow customers to remove some boilerplate code when multiple routes start with the same prefix.
