Depend on upstream windows-capture 2.0.1 for Windows window capture (#277).

• The window_hwnd support that Interpreter needed for windows with dynamic titles landed upstream in windows-capture 2.0 (NiiightmareXD/windows-capture#185), so the temporary windows-capture-interpreter fork is no longer used. Capture behaviour is unchanged.
• Dependency updates: anyio 4.14.2, urllib3 2.8.0, fsspec 2026.6.0 (#272, #273, #274).
