refactor: restructure src/ into shared/ + platform/{linux,macos} layout

Matches the capsper organizational pattern: shared platform-agnostic code
in src/shared/, platform-specific code under src/platform/ with linux/x11/,
linux/kms/, and macos/ subdirectories. Consistent naming across platforms
(encoder_backend.zig, input.zig, keymap.zig). Linux-only modules (protocol,
ipc, keymap) removed from SharedModules in build system.
