Fix the startup crash on macOS 11 and 12
The simple mode turned the native menu bar off so that the hidden engineering
window would not leave its menus in the system bar. It did so by calling
setNativeMenuBar(false) on a menu bar that already existed, and in Qt 6.4 -
which is what the build for macOS 11 and 12 uses - that leaves it half built.
The very next line hides the window, Qt runs a layout pass, asks the menu bar
for its minimum size and dereferences a null pointer.
So that build crashed on launch, every time, for everyone. It is also the build
we hand to anyone on Catalina or Monterey, and the report that found it came
from a MacBook Air on 12.7.6.
The decision is made before the window exists now, through the application
attribute, so there is no native menu bar to convert and nothing to leave in a
broken state. Newer Qt was never affected, which is why it never showed up here.
