feat(wip): support for anvil

We seem to be hitting an issue where the node gets progressively slower to mine transactions to the point where the tests time out. This is a known problem with anvil (see linked issues below) however we are running into it at ~500 blocks with automine instead of thousands:

• perf(anvil): Memory consumption steadily increases during prolonged transaction replays foundry-rs/foundry#6017
• Anvil stops producing blocks and then mines a bunch of blocks at once foundry-rs/foundry#6036
• perf(anvil): execution time per transaction increases with number of transactions foundry-rs/foundry#6124

Perhaps it's related to the heavy usage of snapshots we make?
