Upgrade Hibernate ORM to 6.3.0.Final

I guess this means having ORM 6.3 on the branch main and create a separate branch for ORM 6.2 (branch 2.0).

We will also need to update the GitHub actions to make sure that the branch 2.0 is tested the same way we test main

Thanks, but I already have a fix for this issue. I'm going to send a PR on Monday
