Update versions and migrate to uv

chore: migrate from Poetry to uv with hatchling (#3)

* chore: migrate from poetry to uv with hatchling + hatch-vcs

- Replace pyproject.toml [tool.poetry] with PEP 621 metadata
- Use hatchling build backend + hatch-vcs for dynamic versioning
- Remove poetry.lock, poetry.toml
- Add uv.lock
- Update Makefile for uv commands
- Update pre-commit hooks (autoupdate)

* chore: track .python-version

* refactor: migrated fitz imports to pymupdf and fixed rect containment check

- Replaced fitz imports with pymupdf across processed_doc.py and processed_page.py.
- Fixed rect containment check to use self.rect.contains() instead of broken in operator.
- Modernized Python style with idiomatic patterns and improved type annotations.

* chore(build): switched build backend from poetry to uv with hatchling

* use uv in github workflow
