These tools aren't included in a default x check, but checking them locally is still useful for maintainers working on the tools themselves.

This PR therefore explicitly checks them in a small number of CI jobs, to ensure that check builds for them continue to work.

The particular jobs chosen are mostly arbitrary. I wanted these checks to occur at least once in PR CI and full CI, without making any of the longest jobs longer.

This is useful for ensuring that changes to compiletest haven't broken
rustdoc-gui-test.
