Adding some "user contributions" to Examples and documentation

I'm submiting three Examples and a "User Guide" that I wrote as being useful for myself, in the hopes that others might find them of some use. For the "User Guide" I have included both a PDF version, and, in case anyone wants to make further improvements, the OpenOffice source (a .odt file).

Hey there @ClarkInAz. I appreciate your additions and I like the examples you wrote! But I can't merge your pull request just yet. Here's a couple of things:

1. Would you mind updating your branch to match this one? I've been working on updating this library and the repository structure has changed a bit. Can you throw your examples in the "User Submitted" folder for me?

2. I'm sorry there wasn't adequate documentation for this product originally. SPX products are partially experimental and are developed on an accelerated timeline, so they don't get the full SparkFun documentation. That being said, we normally don't have our documentation in pdf form living in the library repo. Would you be okay removing those two files from this branch so that I can merge? The documentation for this product is being fleshed out now and will be available on the SF site in the next few weeks.
