Fix macOS arm64 binary signature in release pipeline

Strip malformed bun-compile signatures and ad-hoc re-sign macOS binaries
in release.yml and Homebrew formula. Resolves v2.0.0 SIGKILL-on-launch
due to invalid LC_CODE_SIGNATURE that Gatekeeper rejected.
