Change the consumers and queue name from multiplex to mesmer.

This PR is blocked by vanvalenlab/kiosk-redis-consumer#160, which migrates the consumer name to MesmerConsumer. Once that PR is finished and released, this PR will update the redis-consumer version as well as the provided environment variable names (which will also change to be prefixed with MESMER_).
