Add Serilog logging and log analysis script

Integrated Serilog for detailed application logging, including lifecycle events, task operations, and configuration management. Introduced `LoggingService` for log initialization, cleanup, and retention. Added logs for critical processes in `App.xaml.cs`, `MainWindow.xaml.cs`, `ConfigService.cs`, and `TaskService.cs`.

Included a PowerShell script (`Analyze-TaskyPadLogs.ps1`) for log analysis, supporting filtering by date, errors, and events. Updated `TaskyPad.csproj` to include Serilog dependencies and the log analysis script. Improved error handling and debugging information throughout the application.
