Readme: update contributor lists

Changes proposed in this Pull Request:

Some of those had not been updated in a whiile, so I added new contributors based off recent activity in the monorepo. I also took the opportunity to reorder them alphabetically so they're easier to parse later.

This PR also bumps the version number for the VaultPress plugin to start the release cycle following the Beta release.
