but looking at the log I saw more errors down the road :(

Also the correct comand is

ee system install

not

ee install system

Found the problem: Two timezone defined in /etc/timezone

root@sitsec:~# cat /etc/timezone
Etc/UTC
America/New_York

Just remove the one timezone from /etc/timezone file fix the problem
Ideally the /etc/timezone file only contains one timezone

Also you can ignore php warning durings plugin installations
If somethings serious error you get red prompts with error details

@RugWarrior Fixed timezone now easyengine only take first time entry from /etc/timezone
