Please remove the dependency restriction of pydantic <2.0

Can someone please upgrade setup.py such that it doesnt require pydantic < 2.0. pydantic is at the heart of llm based workflows and i find it quite concerning that labelbox is requiring such an old version

Using Labelbox alongside Instructor for reliable LLM output from OpenAI is impossible due to this issue. Please fix ASAP
