Feature: Set up API v1 routing and directory structure

Overview: This PR establishes the foundational directory structure and routing for API version 1, enabling easier management and future expansion of endpoints.

Changes

• Created the app/api/v1/ directory to house versioned API endpoints.
• Added __init__.py and routes.py within app/api/v1/ to define and organize API routes.
• Configured an APIRouter instance in app/api/v1/routes.py.
• Integrated the new APIRouter into main.py under the /api/v1 path, making it the entry point for all v1 endpoints.
• This setup facilitates clear separation and versioning of API routes.
