This PR migrates this project to use Nordic Gradle Version Catalog.
The goal is to have a unified source of dependency versions among Nordic libraries.
Nordic dependencies were moved to an internal Version Catalog. The library will be released before Nordic BOM, so the versions cannot be read from a remote location at the time of build.
