This pull request replaces Episodes.fm references with Podlink branding and functionality.

Changes Made:

Removed Episodes.fm SVG assets
Added Podlink SVG assets
Updated apps.json to reference Podlink instead of Episodes.fm
Modified PodcastHeader component to use Podlink
Updated utilities to use Podlink branding

Files Changed:

server/assets/episodesfm.svg (deleted)
server/assets/podlink.svg (added)
ui/images/episodesfm.svg (deleted)
ui/images/podlink.svg (added)
server/data/apps.json (modified)
ui/src/components/PodcastHeader/index.tsx (modified)
ui/src/utils.ts (modified)

This maintains all existing functionality while updating the branding to reflect Podlink.
