Improve documentation for document and collection routes

The document and collection endpoints are extensive. They do quite a bit behind the scenes with various third party services. They are also play an important role to the foundation of the platform. With all of that, there currently is no documentation on how to use them, making it difficult to integrate into other features of the platform.
