Swagger UI: Simplify

Describe the bug
Right now we have a long list of APIs from the template which are not relevant and not used when we access the production.

To Reproduce
Steps to reproduce the behavior:

1. Go to https://aiapi.projecttech4dev.org/docs
2. Keep scrolling the APIs

Expected behavior
Only the APIs that are needed and relevant should be there in documentation, we can either delete or hide others like Items, Utils, etc
