feat(yjs): expose Y.js BlockNote conversion primitives #1866

Summary

This exposes some Y.js primitive conversion utilities that were previously only exposed on the ServerEditor, to be a new export @blocknote/core/yjs which holds several common conversions that would be needed for moving between BlockNote JSON and Y.js fragments or docs.

Changes the server editor to use these new utils. Adds an additional battery of tests to ensure the new methods.
