Tagged 2024R2 Docker image is wrong

The tagged 2024r2 Docker image seems to be wrong; it's reporting "25.1" as its server version.

Solved by re-creating the image from the installer (with a one-off Dockerfile to be found in a separate backend branch). For the future, we should continuously push the tagged image from the release branches.
If there's a need, we can polish and make this Dockerfile public (as it started from the Customer Portal download).
