OpenSearch support proposal

Hi API Platform team,

I'm currently using API Platform in production and we're migrating from Elasticsearch to OpenSearch (to managed on OVH). As API Platform currently only supports Elasticsearch, this creates a limitation for our use case.

I'd be interested in contributing OpenSearch support to the project. My company (ChapsVision) would potentially sponsor part of this work. However, before investing time, I'd like to clarify a few points with the maintainers:

Technical questions:

1. Is OpenSearch support aligned with the project's roadmap?
   What would be the preferred architectural approach? (separate bundle, adapter pattern, shared implementation?)
2. Are there any existing efforts or PRs in this direction that I should be aware of?

Practical considerations:

3. I can contribute regularly but not full-time. Would this work for the project's expectations?
4. What would be the minimum scope for an acceptable first PR?

I'm happy to provide more details about our use case or discuss the technical approach before opening a formal PR.
