`e2e`: Add separate jobs for each of fuji and mainnet configuration

Currently the e2e job is running against local configuration. To ensure better coverage for fuji and mainnet configuration - especially during the time around upgrades - separate e2e jobs should be added that use fuji and mainnet configuration. Not that the networks should join fuji or mainnet, only use their configuration.

This issue has become stale because it has been open 60 days with no activity. Adding the lifecycle/frozen label will cause this issue to ignore lifecycle events.
