Add VPCEndpointService resource to ec2 controller

Thank you for opening this ticket @ib-ak . The VPCEndpointService resource can be generated and we can, at least, quickly support the create/delete operations. Would you be interested in contributing to the ec2-controller? Happy to support and provide guidance for this issue.

Especially for this issue, you'll have to re-generate the ec2-controller after removing the VPCEndpointService from the ignored resources list.
