docs: add per-variant config pages (basic, self-signed, SWAG) Move the sample configurations into the wiki as dedicated pages, each with a complete copy-paste ocserv.conf, compose snippet, and connection steps. TCP-only by default; no shared Docker network in the SWAG variant.
