chore: bump version to v1.2.0 for next development cycle

Following release branch creation for v1.1.0, updating develop

branch to target the next minor version v1.2.0.

Changes:

- Update package.json version to 1.2.0

- Prepare for next development cycle

This maintains the Git Flow pattern where develop always contains

the next planned version.
