Refactor `weak-node-api` to have Node-API functions injected instead of loading the itself

It turns out impractical to have to build an XCFramework linking against libhermes as part of building the app. I believe it'll be simpler if we use a pre-built no-dep XCFramework and instead inject the Node-API function pointers from our host.
